With each Birthday I find myself looking back over the years in extreme amazement over God’s faithfulness, mercy, and grace!! His sovereignty and the perfection of HIS plan leaves me really just overwhelmed with gratitude! Now, as I look forward to what the days ahead hold there are so many unknowns for me YET they are all known to the Lord God[Acts 15:18] and that is truly all I need to know! π Come what may, I am confident that “The Lord is my Shepherd; I shall not want. He maketh me to lie down in green pastures: He leadeth me beside the still waters. He restoreth my soul: He leadeth me in the paths of righteousness for His name’s sake.” The Lord God is a faithful Guide[Ps 48:14]! As very few photos were taken, I debated on whether to post this blog post or not. THANK YOU!! My family went above and beyond[as alwyas] to bless me in so many sweet & special ways. What a beautiful way to commemorate your birthday, Rachel!!! I love all of the homey, wonderfully cozy photos!
I don’t known what my favorite birthday cake or dessert would be. I have not had a birthday celebration in many years! It’s a bit amazing to realize that! BUT, my favorite dessert now is homemade frozen-fruit ice cream with healthy, homemade chocolate sauce!!! Yum!!!
Healthy ice cream:
Frozen banana pieces, frozen peach slices (both peeled and sliced or broken before freezing), about 1/4 cup of the creamy part of coconut milk (refrigerate the can to let the solids float to the top, don’t shake the can, open carefully, scoop out half of the creamy part – refrigerate or freeze the rest, use the remaining coconut water in the bottom of the can, later in a smoothie), 1/4 tsp vanilla extract, 1 Tbsp raw honey (opt), dash of sea salt or pink Himalayan salt. Blend all but the fruit together for a a few seconds, then add chunks of fruit a little at a time, to taste, until the mixture is thick and creamy. If the blender bogs down, add a bit of milk of your choice or even fruit juice to ease the blending. When blended to a creamy consistency, place ice cream in a container (I have an insulated container that is made for storing ice cream), and place it in the freezer. Stir the mixture in about a 1/2 hour and return the container to the freezer. It should be “soft-serve” for a couple of hours, then harden after that. If too hard, let it sit at room temperature for about 10 minutes to soften enough to scoop it out.
Healthy chocolate sauce: (for 1-2 servings – increase for more)
1 heaping Tbsp raw organic cacao powder, (or cocoa powder)
1 Tbsp raw honey (I use Y.S. Organic Raw Honey – a mild, thick, non-runny honey, but any will do)
1/8 tsp vanilla extract (or more to taste)
dash of sea salt or pink Himalayan salt (this is actually an important ingredient – go figure!)
a small bit of milk or fruit juice of your choice (just enough to allow the sauce to be stirred into a creamy consistency – be careful, it doesn’t take much!)
Put first 4 ingredients into a small bowl and add a little bit of liquid. Stir until creamy, adding more liquid if needed. If it becomes too runny, just add more cacao (or cocoa) and honey, until the consistency is to your liking.
Cover the bowl and refrigerate, if necessary, until the ice cream is ready.
When ready, pour the sauce over your ice cream and enjoy!
You could also stir in chopped strawberries, blue berries, chocolate chips, nuts or shredded coconut to your ice cream before freezing it. Be as creative or as simple as you want! Sometimes I only use frozen bananas, vanilla, salt, and about 1/4 cup (or less) of unsweetened almond milk.
This is for those with a sweet tooth that can’t have refined sugar, or those that simply want an occasional dessert that is healthy!

Oh, I’m so glad, Anna!!!! I can’t handle milk either! I didn’t used to be able to handle any dairy at all, except butter, but for the past 4 or 5 years, I can eat all the hard cheeses and plain yogurt that I want! Still can’t drink milk from cows or goats, though. So, take heart; you may be able to enjoy at least some dairy products again someday! :-)

It IS amazing how many options for healthy sweets there are! I don’t feel at all “deprived”. Once my taste buds adjusted to the new normal, things that one wouldn’t normally call sweet, taste sweet, like whole grains and some vegetables. Even some whole meats taste sweet.
